Breakfast of champions when you’re feeling iffy? Carrot Cake Smoothie Bowl, obvs!
I’m trying really hard to be mindful of what I’m eating during Lockdown. Already struggling with disordered eating patterns, it’s been very easy for me to resort to old binging habits to cope with my current situation. I recognize this and am being very aware of how I eat and speak to myself about my eating habits at the moment.
So, here is an easy peasy and ultra-tasty brekkie to help get the day going.
You’ll need:
1 x Carrot
1 x Banana – this is best if it’s frozen.
1 x Citrus Fruit – Orange is best
2 x Pineapple Slices
1 scoop USN Vegan Vanilla & Cinnamon Protein Powder
Ice
1 cup of Unsweetened Dairy-free Milk
1 splash of Vanilla Essence
1 tbsp of Chia Seeds (Optional)
Garnish (Optional):
Various nuts, seeds and dried fruit for garnish
Blend your ingredients together in a Nutribullet or Blender until just creamy enough to pass as nice-cream.
Pour into a bowl or glass.
Garnish.
Enjoy!
